    Aha! I thought that cross-section looked like something Chef Alfredo had made a drink out of on ‘Haciendas de Mexico.’ It’s a cactus fruit called pitahaya or pitaya (as well as dragon fruit), native to Mexico and other parts of Latin America. Wikipedia has several photos, including some of the odd plant it grows on; also some cultivation advice.
